i have watched some youtube videos and have a basic understanding of this device
Here is what i think i know
i have 5 or 6 devices plugged into my PC, mic, speakers, soundbar, dac amp, usb headset, i think i can add
these to the Stream 100 and switch between them.
Can i play audio through more than 1 device at the same time, and if it can, can it do different volume levels

I myself use the XLR200, which has more functions and more buttons, and that's more than enough for me. The XLR 100 is a little too small for me in terms of scope. I would recommend the XLR200 to creators who do live streams, etc.
no live streams or such, just want to be able to pick 2 outputs at the same time and have diff volume levels.
I think the XLR 100 will be sufficient for you.
