How should I connect my DJI Mic 2 to the Inpulse 500 so that it sounds 'good'? When I use a 3.5mm to 6.35mm adapter, I only start hearing something when I turn the volume all the way up — and then I immediately get feedback. If I pull the 3.5mm plug slightly out of the adapter, it works, but it's very unstable.

Welcome to the forum area.
1) 6.3 mm (1/4") Adapter on microphone input
I suspect your microphone output is stereo, then connecting a TRS connector makes a mess (TRS is perfect for a mono balanced microphone).
You should try a 6.3mm MONO adapter (TS) instead of a stereo adapter (TRS).
2) Dual RCA adapter on aux input
DJI Mic 2 user manual, at page 28, says "Max Input Level (3.5mm): -6dBV (THD < 0.1%)".
Input level is not clear for me as I see no schematics describing what it refers to, but if it means "output level" instead of "input level", then
- it is not a microphone level (it is too too loud, microphone input level is usually between -40dBv and -60dBv)
- it is a line level and it should work with DJControl Inpulse 500 Aux input, so you can try connecting it to the aux input with a dual RCA male to 3.5mm (1/8") stereo adapter
